My Neopolitan grandma made these dishes in the summertime using healthy drizzlings of fragrant olive oil:
Yellow potatoes, steamed or boiled, then cooled. Slice and drizzle with olive oil, chopped basil, salt & fresh ground pepper.
Sprinkle with chopped, fresh sweet onion as an option that is recommended.
Same as above, but using beef that as been cooked, cooled and shredded. Use all as suggested above and a recommended option being a sprinkling of little capers.
Zucchini, sliced, salted and left to dry, either be lining on paper towels or in a sieve
