The first part is the basic hummus recipe, with some ideas below of what you might want to add. (The one I made and photographed has a chopped chipotle pepper added.) Increase the smoothness by adding more oil or water and/or blending it longer.
The Very Best Homemade Hummus
1 tin canned garbanzo beans (About 1 1/2 cups)
2 T tahini
2 T olive oil
2 cloves garlic chopped finely
Juice of 1/4 lemon
1/4 cup water (To thin out if too thick as an alternative to adding more oil)
Salt to taste
2 diced chipotle pepper or dash of powder
1/4 cup finely diced spinach (Frozen works well – thaw first)
Dash of curry powder
Set aside about 8 beans to toss on top when you’re serving. Put all ingredients into blender but only half the water. Blend well. Add more water as needed to get it to the desired thickness. When serving toss a few beans on top, and drizzle some olive oil. You could also add a chipotle or a dash of paprika. Makes about 2 cups.
