Mixed Herb and Walnut Pesto

You could call this “deconstructed” pesto, since I’ve not over blended it and you can still identify the various bits.  Feel free to blend more for a smoother finish.

Mixed Herb and Walnut Pesto

1/2 cup fresh tarragon (packed loosely)
1/2 cup fresh basil
1/4 cup fresh flat leaf parsley

2 cloves garlic
1/4 cup walnuts
1/4 cup olive oil
2 tbsp water
salt and pepper

Coarsely chop the herbs, walnut and garlic.  Add all the ingredients to the blender and blend. Do a taste and visual test and see what it needs. Adjust accordingly. To make it smoother add a touch more oil and water and blend a bit longer.
