Berry Speckled Oatmeal

I’m a big fan of mixing other grains with oatmeal. For this one I used steel cut oats as the base, and added brown rice that I had in the fridge.  Other grains that work great with oatmeal are barley and quinoa (the non-grain, grain).

And should you have any leftovers, keep it and add it to yogurt!  If that does not sound appealing, try it once and it will become appealing.

Berry Speckled Oatmeal

1/4 cup steel cut oats*
3/4 cups water
Brown rice (or any cooked grains you might have on hand)
Hemp seeds
Coconut flesh (Buy a whole coconut and scoop out little bits of fresh flesh from the inside, or use flakes of unsweetened coconut.)

Goji berries*
Whole milk
(I usually use just a touch since I don’t want the oats to cool too much.)

Add oats to boiling salted water. Turn down to simmer. Check after about 20 minutes to see if you need to cook a bit longer (usually takes about 30 mins); add more water if needed.  When done, top it all off with all the things above.

If you’re using traditional rolled oats and want some nuttiness, add some sunflower seeds, or chopped almonds to the cooking oats, about a minute before the oats are done.

* Soaking overnight will cut cooking time slightly
**I keep these on hand and use them often in oatmeal or yogurt. They are a bit of an acquired taste since they are slightly bitter-sweet. Try them!
