Lemon Tea Bread
1/2 cup butter
3/4 cup sugar
1 tsp vanilla extract
zest from one large lemon
1 1/2 cup flour
1 tsp baking powder
juice from one lemon
1/3 cup milk (the milk plus the juice should=1/2 cup)
optional: 1/4 cup walnut or 1 tsp grated ginger or 1/2 cup berries
icing sugar (for post cooking, dusting on top)
Preheat over to 375. Grease loaf pan (or add parchment paper to guarantee no stick). Cream butter and sugar until fluffy. Add eggs and vanilla and lemon zest. Mix some more. Sift in the flour (use a basic wire sieve), baking powder and salt. Add the milk, lemon mixture. Blend everything. If you’re adding nuts, ginger or berries, fold these in. Pour into loaf pan and bake about 45mins – 1 hour. Let cool and dust icing sugar over top before serving.
