3/4 cup sugar
2 eggs
1 tsp vanilla extract
zest from one large lemon
1 1/2 cup flour
1 tsp baking powder
salt
juice from one lemon
1/3 cup milk  (the milk plus the juice should=1/2 cup)
optional: 1/4 cup walnut or 1 tsp grated ginger or 1/2 cup berries
icing sugar (for post cooking, dusting on top)

Sift in the flour (use a basic wire sieve), baking powder and salt.  Add the milk, lemon mixture. Blend everything. If you’re adding nuts, ginger or berries, fold these in.
