I’m not sure why Fried Rice has a rap of not being good for you - I think it’s because it’s often heavy on the “fried”. This version is light on the oil and heavy on the vegs. It’s ideal for getting rid of leftover vegs (and rice!) but feel free to start with fresh.
Healthy Fried Rice
1/2 small onion
1/2 cup chopped up broccoli (zucchini or spinach would work well)
2 eggs
1 cup cooked rice
Soy sauce
Fresh ginger
Chop onion and sautee. Chop up the vegs and add to onion. Add the eggs straight to the pan and stir until eggs are nearly cooked. Add rice. Mix and let it all get warm. Transfer to bowl. Add soy sauce and either grated ginger or match stick slices of ginger. Makes about 2 servings.
