Gluten-Free Multi-Grain & Fruit Muffins

2/3 c chickpea flour (Or 1/3 white rice flour & 1/3 brown rice flour)
2/3 c tapioca flour
2/3 c corn starch
1 tsp cinnamon
1/2 tsp nutmeg
3/4 tsp baking soda
2 tsp baking power
1 c grated carrots
1/2 c dried or frozen blueberries
1/2 c dried cranberries
2 eggs
1/4 c olive oil
2/3 c orange juice
1 large ripe banana or 2 small

Set oven to 375. Grease muffin tins. In large bowl mix dry ingredients.  Add the carrots, and berries and mix with the dry.  In separate bowl mix together eggs, oil, juice and mashed banana. Add this to the berry and flour mixture.  Bake for 15 mins (might take a bit longer but test after 15.)  Makes TWO dozen, so half it if you’re only interested in a dozen.
