There is nothing as complimentary as sweet figs and salty feta. Those two parts of this salad are non-negotiable, but feel free to add other vegs or use another variation on the green lettuce leaf.
Fig ‘n Feta Salad with Rosemary-Infused Dressing
Salad
Figs (fresh!)
Feta cheese (I love sheep’s feta if you can find it, but any kind will do)
Slivered almonds
Avocado diced
Green leaf lettuce
Rosemary Dressing
1 part vinegar (I used rice wine vinegar, but any will do including simple lemon juice)
3 parts olive oil
A drizzle of honey
A little bit of Dijon mustard (As an emulsifier)
A couple sprigs of rosemary
Salt and pepper
1 T grated ginger
Mix the dressing ingredients together, and let it sit at room temp for at least a couple hours to allow the rosemary flavor to infuse into the oil. When you’re ready to serve, strain the dressing through a sieve so you’re not crunching on rosemary.
