Pretty much anything with blueberries in it is a favorite of mine. I made this one up one afternoon when I had leftover barley in the fridge and a bunch of mint that smelled so much like summer, I had to put it to use.
Blueberry Barley and Mint Salad
Barley (you could use quinoa or farro)
Goat cheese (you could also use feta)
Salt and pepper
Vinaigrette Dressing (See how to make it here.)
Thinly slice the mint and cut the tomatoes in half or quarters if large, chop the almonds but not too finely. Toss everything together. It will keep for several days in the fridge.
