Arugula can be a touch bitter but the sauteed radishes take the edge off as they actually get a touch sweet when sauteed. The toasted pumpkin add delicious crunch. The goat cheese actually IS in there, just buried. Don’t leave it out as this creamy addition adds a lot to the party.
Arugula With Radishes, Pumpkins Seeds And Goat Cheese
Vinaigrette Dressing (See how to make it here.)
Wash the arugula. Sautee a few radishes in butter and add a pinch of salt. Sautee or toast the pumpkin seeds. Add to the arugula. Toss with dressing. Pull off some pieces of goat cheese and drop into salad (Hint: it’s far easier to handle goat cheese when your fingers have oil on them!)
